  • For the Fried Rice
  • 2 cups cooked cold jasmine rice (day-old works best)

  • 3 large eggs

  • ½ cup low-fat cottage cheese

  • 1 cup frozen peas and carrots

  • 2 green onions, sliced

  • 2 cloves garlic, minced

  • 1 tablespoon low-sodium soy sauce

  • 1 teaspoon toasted sesame oil

  • 1 tablespoon avocado oil

  • ½ teaspoon black pepper

  • ¼ teaspoon kosher salt (adjust to taste)

  • ½ teaspoon onion powder

  • ½ teaspoon garlic powder

  • ½ teaspoon paprika

  • 1 teaspoon sesame seeds (optional garnish)

Directions

  • Cook the rice ahead of time and refrigerate until completely cold. Day-old rice gives the best texture.
  • Beat the eggs in a bowl until smooth.
  • Heat avocado oil in a large non-stick skillet over medium-high heat.
  • Add the beaten eggs and gently scramble until just cooked. Transfer them to a plate.
  • Add the minced garlic to the same skillet and cook for about 30 seconds until fragrant.
  • Add the frozen peas and carrots. Cook for 3–4 minutes until heated through.
  • Add the cold rice, breaking apart any large clumps with a spoon.
  • Pour in the soy sauce and sesame oil. Sprinkle in garlic powder, onion powder, paprika, salt, and black pepper. Stir well to coat all the rice evenly.
  • Return the scrambled eggs to the skillet and gently mix them into the rice.
  • Stir in the cottage cheese and cook for another minute until it melts into the rice and becomes creamy.
  • Fold in the sliced green onions and cook for about 1 minute.
  • Serve hot with sesame seeds sprinkled on top if desired.
