The Best Potato Cheese Balls Recipe You’ll Ever Make (Golden, Crispy & Extra Cheesy)

If you’re looking for a crispy, cheesy appetizer that everyone reaches for first, this Potato Cheese Balls Recipe is one of my favorite comfort food snacks. The outside gets perfectly golden and crunchy while the inside stays creamy with gooey melted cheese. I first started making these for football weekends, and now my family asks for them almost every game day. They aren’t difficult at all, and honestly, they’re hard to stop eating once you have one.

This recipe uses simple ingredients you can easily find at Walmart, Kroger, Target, Aldi, or any local grocery store in the USA. They’re great for parties, after-school snacks, holidays, or even as a fun side dish with burgers.

Why You’ll Love This Potato Cheese Balls Recipe

  • Crispy golden coating with a soft, fluffy center.
  • Loaded with stretchy melted cheese.
  • Budget-friendly using everyday ingredients.
  • Great for meal prep and freezing.
  • Kid-friendly and perfect for family gatherings.
  • Easy to customize with your favorite seasonings or cheeses.

How I Came Across This Recipe

I actually discovered this recipe after having leftover mashed potatoes from Thanksgiving dinner. I didn’t wanted to waste them, so I mixed in some cheese, coated little balls with breadcrumbs, and fried them. The first batch disappeared before I could even finish making the second one. Since then, I’ve made small improvements over the years by adding garlic powder, smoked paprika, and using sharp cheddar for extra flavor. It isn’t fancy, but it always works.

These crispy Potato Cheese Balls are made with fluffy mashed potatoes, sharp cheddar, mozzarella, herbs, and a crunchy breadcrumb coating. They’re the perfect party appetizer, game day snack, or family-friendly comfort food with a delicious gooey cheese center.

Ingredients

  • For the Potato Mixture
  • 2 pounds Russet potatoes, peeled and cubed

  • 2 tablespoons unsalted butter

  • ¼ cup whole milk

  • 1 teaspoon garlic powder

  • 1 teaspoon onion powder

  • ½ teaspoon smoked paprika

  • 1 teaspoon kosher salt

  • ½ teaspoon black pepper

  • 2 tablespoons chopped fresh parsley

  • 2 tablespoons grated Parmesan cheese

  • Cheese Filling
  • 8 ounces sharp cheddar cheese, cut into small cubes

  • 4 ounces mozzarella cheese, cut into small cubes

  • Coating
  • 1 cup all-purpose flour

  • 2 large eggs, beaten

  • 2 cups Italian-style breadcrumbs

  • ½ teaspoon paprika

  • Vegetable oil for deep frying

Directions

  • Peel and cube the Russet potatoes. Place them into a large pot of salted water and boil for 15–18 minutes until fork tender.
  • Drain the potatoes well and allow them to sit for about 3 minutes so any extra moisture evaporates.
  • Mash the potatoes until smooth. Mix in the butter and milk while still warm.
  • Add garlic powder, onion powder, smoked paprika, salt, black pepper, Parmesan cheese, and chopped parsley. Mix until everything is evenly combined.
  • Refrigerate the potato mixture for about 30 minutes until firm enough to handle.
  • Take about 2 tablespoons of potato mixture and flatten it in your hand.
  • Place one cube of cheddar and one cube of mozzarella in the center.
  • Seal the potato mixture around the cheese and roll into a smooth ball without cracks.
  • Coat each ball in flour, then dip into beaten eggs, and finally roll in breadcrumbs until fully coated.
  • Heat vegetable oil to 350°F (175°C) in a deep skillet or Dutch oven.
  • Fry the potato cheese balls in small batches for about 3–4 minutes until golden brown and crispy.
  • Transfer to a paper towel-lined plate to remove excess oil. Let cool for 2 minutes before serving.

Notes

  • Chill the potato mixture before shaping for easier handling.
  • Make sure the cheese is completely sealed inside to prevent leaking while frying.
  • Fry in small batches to maintain the oil temperature.
  • Freshly grated Parmesan provides the best flavor.
  • These can be prepared ahead of time and refrigerated for up to 24 hours before frying.
  • Uncooked breaded potato cheese balls freeze well for up to 2 months.
  • Bake at 400°F for 20–25 minutes or air fry at 375°F for 12–15 minutes if you prefer a lighter version.

Making about 20 potato cheese balls usually costs around $12 to $15, depending on your grocery store and cheese brand.

That comes out to roughly 60 to 75 cents per serving, making it an affordable appetizer for parties.

My Tips While Making This Recipe

One thing I learned after making these many times is not to skip chilling the potato mixture. It may seem unnecessary, but it makes shaping much easier. Also, don’t overfill them with cheese or they’ll burst open while frying. I also like using freshly grated Parmesan because the flavor tastes little better than the pre-shredded kind.

If I’m serving guests, I fry them just before everyone arrives because they’re at their crispiest right out of the oil.

Best Dipping Sauces

These potato cheese balls pair wonderfully with:

  • Ranch dressing
  • Garlic aioli
  • Marinara sauce
  • Spicy mayo
  • Honey mustard
  • Chipotle dipping sauce

Frequently Asked Questions

Can I make potato cheese balls ahead of time?

Yes. Shape and bread them up to 24 hours in advance. Store covered in the refrigerator until ready to fry.

Can I freeze them?

Absolutely. Freeze the uncooked breaded balls on a baking sheet until solid, then transfer them to a freezer-safe bag for up to 2 months.

Can I bake instead of fry?

Yes. Bake at 400°F for about 20-25 minutes, flipping halfway through. They won’t be quite as crispy as fried but still taste great.

What other cheeses work well?

Pepper Jack, Monterey Jack, Colby Jack, Gouda, or Swiss all melt nicely and add different flavors.

Why did my cheese leak out?

Usually it’s because the potato layer was too thin, there were cracks in the coating, or the oil wasn’t hot enough. Seal the balls completely before breading for the best results.
