Ingredients

  • 3 cups fresh rhubarb, chopped into ½-inch pieces

  • 2 tablespoons monk fruit sweetener

  • Smooth the top with a spatula.
  • Bake for 35–40 minutes until the center is set and a toothpick comes out clean.
  • Cool in the pan for 15 minutes.
  • Carefully invert onto a serving plate and allow to cool slightly before slicing.
