Ingredients

  • Pasta Salad
  • 12 oz chickpea pasta

  • 2 cups cooked grilled chicken breast, diced

  • 1 cup cucumber, diced

  • 1 cup cherry tomatoes, halved

  • ½ cup red bell pepper, diced

Directions

  • Bring a large pot of salted water to a boil. Cook the chickpea pasta until just al dente according to the package instructions.
  • Drain the pasta and rinse immediately with cold water to stop the cooking process. Let it drain completely.
  • While the pasta cools, dice the grilled chicken into bite-sized pieces.
  • Wash and chop the cucumber, cherry tomatoes, celery, bell pepper, parsley, and red onion.
  • Add the cottage cheese, Greek yogurt, mayonnaise, lemon juice, Dijon mustard, apple cider vinegar, garlic powder, onion powder, smoked paprika, salt, and black pepper to a blender.
  • Blend until the dressing is completely smooth and creamy.
  • Place the cooled pasta into a large mixing bowl.
  • Add the grilled chicken, cucumber, tomatoes, celery, bell pepper, onion, cheddar cheese, and parsley.
  • Pour the creamy dressing over the salad.
  • Gently toss until everything is evenly coated.
  • Cover and refrigerate for at least one hour before serving to allow the flavors to blend together.
