Day 2 Chicken Taco Bowl Recipe (Healthy, High-Protein & Ready in 30 Minutes!)

If you’re looking for a high-protein chicken taco bowl that’s filling, budget-friendly, and packed with fresh Tex-Mex flavors, this Day 2 Chicken Taco Bowl is one of my favorite meal prep lunches. It’s loaded with seasoned chicken, fluffy rice, black beans, sweet corn, crisp vegetables, creamy avocado, and a simple homemade taco yogurt sauce.

I started making this recipe during busy weekdays when I wanted something that tasted fresh without spending forever in the kitchen. The best part is everything can be prepped ahead, and somehow it taste even better the next day after the flavors come together.

How I Came Across This Recipe

A few summers ago, I had leftover grilled chicken after a family cookout and didn’t want another boring sandwich. I grabbed rice, canned black beans, corn, salsa, and whatever vegetables were sitting in the refrigerator. After tossing everything together with taco seasoning, it turned into one of those meals everyone kept asking me to make again.

Since then, this chicken taco bowl has become one of my weekly meal prep recipes because it’s simple, healthy, colorful, and honestly never gets old.

Another thing I really love is how flexible it is. Sometimes I swap brown rice for white rice or add extra jalapeños when I’m wanting more heat. There really isn’t a wrong way to build it.
